Pancit Dinuguan! A few years back when I stayed in Bicol(Ligao City), I was able to eat this pancit dinuguan in one of the carenderia near the place I stayed. I was surprised that it tasted good. So when I got back to Manila, I decided to make my own version of it. So I tried to look for Pancit Bato since that was the famous pancit in Bicol. And so after having all the ingredients needed, I began to cook this pancit based on my taste bud memory. And I liked the result. I can say that mine was better. I added some bean sprouts and ground chicharon to add flavor to this yummy recipe.

Pancit Dinuguan Recipe

  • 1/2 kg Pancit Bato
  • 1/8 kg Bean Sprout (togue)
  • 1 cup Coconut Milk
  • 1 pc red onion diced
  • 2 gloves Garlic diced
  • 1 tsp Ground Black Pepper
  • 2tbsp oil
  • 1 beef cube

For Dinuguan:

  • 1/2 Pork Belly (sliced into strips or cubes)
  • 2 cups Pork Blood
  • 3pcs siling haba
  • 1/2 cup Vinegar
  • 1 pc red onion diced
  • 2 gloves garlic diced
  • 1 thumb size of ginger minced
  • 1 tsp ground black pepper
  • 5 stalks of lemon grass(tanglad)
  • 2 tbsp oil


How to cook dinuguan.

  1. Heat the pan and add oil. Saute the garlic, ginger, and onion.
  2. Add the sliced pork and stir well. Cover the pan for 2 – 3 minutes.
  3. Add the ground pepper, siling haba, and lemongrass. Make sure to stir occasionally for a minute.
  4. Add the pork blood. Make sure that the vinegar is already mixed into the blood beforehand to avoid blood clumping.
  5. Stir well until the blood thickens.
  6. Add salt to taste. Let it cook for 10 to 15 minutes.

How to cook Pancit Bato.

  1. Soak the Pancit in a bowl of water. Remove the water after. Don’t let it soak for too long.
  2. Heat the pan and add oil.
  3. Saute the garlic and onion.
  4. Add the pancit and the bean sprout and stir for 3- 5 minutes until the pancit is cooked. Don’t let it overcooked.
  5. On a separate pot, mix the coconut milk(gata) with 3 cups of water then let it boil.
  6. Add the beef cube and salt to taste.

Now it’s done! So on a bowl, put some pancit and pour some hot soup and top it with dinuguan. You can add ground chicharon to add flavor to it. Enjoy!
